WMC REPORT- Kentucky Scientist Receives IMS Award

ARGENTINA - The winner of the International Meat Secretariat Scientific Prize is Surendranath P. Suman doctor of Animal and Food Sciences at the University of Kentucky.

Dr Suman was presented with his prize during the World Meat Congress in Buenos Aires.

He won the prize for research into various effects of Modified Atmosphere Packaging on meat and specifically for a paper on the tenderization of beef by injecting ginger extracts.

Dr Suman looked at the effects that plant proteases from ginger has on cheaper traditionally tougher cuts on meat.

The papers were presented to the International Conference of Meat Science and Technology ( ICoMST).

The $5,000 prize is presented to an individual scientist or leader of a group of scientists not older than 40.

The IMS Prize is in recognition of scientific and technological excellence among those engaged in research into red meat.
